Recipe: Mini Black Bean & Goat Cheese Quesadillas

Mini Black Bean & Goat Cheese Quesadillas

Yield: 30 Mini Quesadillas

Black Bean Filling

1- 15 oz can of Black Beans

3 tsp Olive Oil

1 tsp Onion Powder

1 tsp Mexican Oregano

½ tsp Garlic Powder

1 tsp Chili Powder

1 tsp Chipotle Powder

1 tblsp Cilantro

3 tblsp Water

Other Ingredients

6 Flour Tortillas

4 ounces Goat Cheese

3 tblsp Butter

Kosher Salt

Method

Put the black bean filling ingredients in a large saucepan and bring the mixture to a simmer over medium heat.

Simmer the beans vigorously, mashing them slightly with a bean or potato masher for 2 to 3 minutes. Season to taste with salt.

Stack the tortillas and, using a 2.75-inch round cutter, cut  circles out of the stack.

Brush disks lightly with melted butter and place butter side down on a large cookie sheet.

Spread each disk and top with 1.5 tablespoons black beans, top with goat cheese, and remaining tortilla rounds and brush lightly with butter.

Sprinkle tops with a little Kosher salt and bake for 15 minutes in a 375 degree oven.

Quesadillas will be golden but still soft.

Remove to serving tray and serve with sour cream, salsa, or guacamole.
