Baked Eggplant July 20, 2005 at 5:53 PM EST - Updated July 10 at 8:11 PM baked eggplant The recipe for baked eggplant Ingredients 1 Oven Roasted or Deep-Fried Eggplant Stuffed With: Ground Beef or Lamb Chopped Tomatoes Green Peppers Onions Herbs Ground beef mixture Salt (to taste) Pepper (to taste) Thyme (to taste) Cooked ground chuck (drain after cooking) 1/2 red pepper, cut in small pieces 1/2 green pepper, cut in small pieces 1 small white onion, cut in small pieces Combine the above ingredients and cook together till hot and until the vegetables are soft Wash and slice one eggplant in half. Drop one of the eggplant slices into deep fry oil for 1 minute. Repeat for the other half of the eggplant. (Or you may bake the eggplant slices until they are soft and browned) The eggplant will be soft and lightly browned. Place the cooked eggplant half on a plate and fill with already-prepared ground-beef mixture (above). Microwave until just hot. Serve on a plate with steamed broccoli, zucchini slices and carrots.
