Walt's Peanut Butter Pie
1 - 8" Graham pie crust
1 1/4 Cup Creamy Peanut Butter
1 8oz. package Cream Cheese, softened
1 Cup Sugar
1 3/4 Cup chilled Heavy Cream
2 Tsps. Vanilla
1/2 Cup Heavy Cream
1 Cup Semi-Sweet Chocolate Morsels
To Prepare Filling:
In a large bowl, cream together peanut butter and cream cheese until smooth.
Add sugar and beat well.
In a large, chilled bowl, beat 1 3/4 cups heavy cream and vanilla until soft peaks form.
Gently fold into peanut butter mixture.
Pile filling into the crust.
Cover with with plastic wrap or wax paper and chill at least 5 hours or overnight.
To Make topping:
Bring 1/2 cup heavy cream just to a boil in a small saucepan. Remove from heat and stir in chocolate morsels.
Let sit for 2-3 minutes until chocolate melts.
Stir mixture until chocolate and cream are smooth.
Let cool until mixture starts to thicken.
Pour over chilled Pie.
Chill pie again for at least 5 hours or overnight.
