WELLINGTON’S BRUSCHETTA

 

5         Medium Roma tomatoes, diced ¼ inch

1/2  Seeded Cucumber, ¼ inch

1/2  Bermuda onion or ½ cup finely diced

1/4  Cup Parsley fresh chopped

6         Each Roasted Marinated Yellow tomatoes (1/4 cup)

1/8  Cup Fresh grated Parmesan Cheese

7         Basil Leaves rolled then rolled them and cut into thin strips

1/2  Cup Extra Virgin Olive Oil

1/4  Cup Balsamic Vinegar

1/2  Teaspoon Sea Salt

1        Teaspoon Sugar

2oz.  Boursin Herb Cheese

1/4oz.  White Truffle Oil

 

Garnish

Fresh Ground Pepper & Balsamic Reduction and Roasted Garlic Clove

 

Preparation method:

Mix all fresh ingredients and refrigerate for approximately 11/2 hours prior to serving.

Garnish with fresh ground pepper, roasted garlic clove and Balsamic reduction.

Serve with Garlic Toast Crustinies and Boursin Cheese on side.

 

Serves 6 to 8 for an appetizer.
