Watermelon salad

Mozzarella watermelon salad
∗ 2 ½ lbs. small seedless watermelon balls
∗ 2 lbs. small mozzarella balls
∗ 1/3 cup chopped fresh basil leaves
∗ 1 ½ cups scallions, trimmed and chopped
∗ 1/3 cup olive oil
∗ Salt and freshly ground pepper
∗ Baby salad greens
∗ Balsamic vinegar, as needed
∗ 1 Panera Bread French baguette
∗ Fresh basil leaves to garnish
Serves 5
Toss together watermelon, mozzarella, chopped basil, scallions,
and oil. Season with salt and pepper to taste. Spoon salad over
baby greens. Drizzle with balsamic vinegar and serve with crostini
on the side.
Crostini
Slice Panera Bread French baguette into ¼ to ½ inch thick slices.
