Parkers Blue Ash Grill Crab Cake Recipe

 

4 oz. clean Blue Lump crabmeat

12 oz. pasteurized crabmeat

1/8 cup mayonnaise

1/8 cup minced shallots

1/8 cup minced celery

¼ tsp. chopped garlic

¾ tblsp. Dijon mustard

1/8 cup mixed egg

½ tsp. kosher salt

¼ tsp. black pepper

¼ cup fresh bread crumbs

 

Method

  1. In a stainless steel bowl, mix all ingredients by hand (except breadcrumbs).
  2. Fold in breadcrumbs until just incorporated.
  3. Do not overmix.
  4. Form into 2 oz. cakes.

 

To Prepare

  1. Dip into egg wash, then fresh breadcrumbs.
  2. Sear in heated oiled sauté pan and finish in oven until heated throughout.
