Caramel Popcorn

CARAMEL POPCORN FOR SOPHISTICATED TRICKSTERS

For the big goblins at your Halloween party!  Recipe doubles easily.

Preheat oven to 225 degrees

1 bag butter microwave popcorn, popped (about 8 cups)

1 cup macadamia nuts or salted dry roasted peanuts

1/4 cup roasted pumpkin seeds

1/4 cup roasted sunflower seeds

Caramel:

1 stick salted butter

1/2 cup light brown sugar

1/2 cup dark brown sugar

1/4  cup light corn syrup

2 teaspoons vanilla

1/4  teaspoon baking soda

To avoid sticking, use vegetable spray to coat both inside of large bowl, cookie sheets and spoons that you will use.  Put popcorn and nuts in bowl.  Set aside.  Over medium heat, in a 2 quart saucepan, bring to a boil everything but the soda.  Boil 5 minutes.  Add baking soda and stir well.  Be careful as mixture will bubble up.  Pour over popcorn mixture, stirring well to coat.  Pour onto 2 sprayed  cookie sheets.  Bake 1 hour, stirring every 20 minutes to distribute coating.  Let cool for coating to harden; and then store at room temperature in covered containers.
