Stuffed Acorn Squash
Ingredients (for 4 servings)
2 Acorn Squash
½ pound Kroeger and Sons Maple Sausage
¾ cup Bread Crumbs
1 small Sweet Onion, chopped
Combine the sausage, the chopped onion, and ½ cup of the bread crumbs.
Split the Acorn Squash in half, lengthwise. Scoop out and discard the seeds and stringy fibers.
Lightly sprinkle the cut side of the squash with cinnamon and brown sugar.
Insert enough sausage into the whole in the squash to fill it generously.
Sprinkle some of the remaining bread crumbs on the sausage on each squash.
Place in an oven proof casserole dish or on a cookie sheet.
Bake at 350 until the squash is “fork tender”. Small squash may only take 45 minutes, while a larger squash can take up to an hour and a half.
