Truffle Vinaigrette

Truffle Vinaigrette

7 Tablespoons White Truffle Oil

3 Tablespoons sherry vinegar

2 teaspoon aged red wine vinegar

½ cup truffle juice

1 tablespoon black truffles, chopped

Salt and pepper to taste

In a large bowl, whisk all ingredients together until combined.  Season with salt and pepper to taste.  Chill until ready to use.
