Asian Halibut with Broccoli Rabe And Three Sauces

Asian Halibut with Broccoli Rabe and 3 sauces

 

 

 

Ginger Crust

3 ounces Gingerroot, peeled and thinly sliced

3 slices white bread, no crust

6 tablespoons butter

Salt and pepper to taste

 

  1. Blanche and shock the ginger. 
  2. Pulse all ingredients in the food processor
  3. Spread on the fish as a crust and bake accordingly

 

 

 

 

Broccoli Rabe

1 head garlic, roasted

1 teaspoon olive oil

1 tablespoon shallots, minced

1 pound broccoli rabe, blanched and shocked

1 tablespoon butter

Salt and pepper to taste

 

1        In a sauté pan, heat the oil and butter, stir in the garlic and shallots and cook for 2 minutes

2        Add the broccoli rabe and cook until warm.   Season with salt and pepper to taste

 

 

 

 

Ginger Mustard Vinaigrette

1 ½ teaspoon ginger, peeled and chopped

¼ teaspoon garlic, chopped

¼ cup rice wine vinegar

1 tablespoon soy sauce

1 tablespoon brown sugar

1 ½ teaspoon sesame oil

1 tablespoon olive oil

2 ¼ tablespoon Dijon mustard

 

  1. Puree all the ingredients in a blender for 1 minute and strain

 

 

 

 

Cilantro Dressing

¾ cup onion, finely diced

2        tablespoon + 2 teaspoon soy sauce

2        tablespoon + 2 teaspoon rice wine vinegar

2        teaspoon water

½ teaspoon sugar

Pinch salt

¼ teaspoon powdered mustard

Pinch of freshly ground pepper

3        teaspoon olive oil

3        teaspoon sesame oil

½ cup chopped cilantro leaves
