Smoked Salmon Tea Sandwiches


For the Filling


4 ounces smoked salmon, finely chopped

1 8 ounce package cream cheese, room temperature

4 ounces herbed goat cheese (Chevre), room temperature

2 tablespoons red onion, finely chopped

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh lemon juice


Combine all ingredients in a medium bowl and chill until ready to assemble.






For the Bread Box


1 UNSLICEDPullman Loaf

1 Sliced Pullman Loaf, crusts removed, slices cut in half diagonally


With an electric knife, slice off the top of the loaf.  Cut around the inside of the loaf about ¾ inches from the sides.  Turn the loaf on its side and make an incision along one side, ¾ inch from the bottom crust.  Remove the inner block of bread, and save for croutons or bread crumbs.




To Assemble


1 seedless cucumber peeled and thinly sliced



Spread salmon filling thinly on 1 triangle of bread and add 2 thin slices of cucumber.  Add another bread triangle to form a sandwich.  Fill breadbox with sandwiches and garnish with fresh herbs and/or flowers.
