Trattoria Roma's "Giuseppe" INGREDIENTS: 1 tablespoon olive oil salt and pepper to taste 1/2 large red onion, diced 1 tomato, peeled, chopped 10 pieces Italian sausage 1 medium boiled potato, peeled and cubed 1 whole skinless, boneless chicken breast * Amounts are intended to be a guideline. Prepare to taste.
DIRECTIONS: 1. Heat olive oil in a large skillet over medium-high heat. Saute onion until soft. Add salt and pepper. 2. Add the Italian sausage pieces, boiled potatos and tomatoes until sausage is cooked through. 3. Add a little water and the chicken and simmer. 4. Scrape any bits of food from the bottom of the pan, and bring to a simmer. Simmer for 5 minutes.
