Burbank BBQ's Smoked Chicken And Sausage Gumbo

SMOKED CHICKEN AND SAUSAGE GUMBO

Oil ¼ cup

Okra-frozen, sliced 2 lbs.

Yellow Onion-diced medium 1 qt.

Green Peppers-diced medium 1 pt.

Chopped Garlic 2 oz.

Blackening Spice 6 T.

Chicken Stock ½ gallon

Diced Tomatoes-drained 1-16oz can

Smoked Chicken 1 lb.

Andouille Sausage-sliced and baked 1 lb.

Tobasco 10 dashes

Salt and Pepper to taste

PREPARATION

In saucepot, heat oil very hot. Add okra, onions and peppers and cook until okra falls apart. Add garlic and blackening spice and cook for 2 minutes. Add chicken stock and tomatoes and simmer until soup thickens to desired consistency. Slice sausage and bake in oven to render out the fat. Add chicken, sausage and tobasco and season. Top with fresh chopped green onion if you like.
