Ingredients:
3 or 4 large tomatoes (red and yellow if you can get them)
½ sweet onion (finely chopped)
1 lime (juiced)
1 tablespoon white vinegar
1 tablespoon canola or olive oil
1 teaspoon salt
½ teaspoon finely chopped garlic
½ to 1 teaspoon ground chipotle pepper
Directions:
Peel tomatoes and coarsely chop. Put in a colander to drain excess juice. Add the rest of the ingredients into a bowl large enough to hold the tomatoes and stir well. Add tomatoes last and toss gently to coat. Serve as a side dish, or with chips as a salsa.
