Ingredients:
- 1 1/4 cup corn meal
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup milk
- 1 large chopped onion
- 2 eggs
- 1/2 - 1 cup cooking oil
- 1/2 large chopped bell pepper
- 1/2 clove garlic
- 1 can cream-style corn
- 8 oz. grated cheese
- Green onion
- Jalapeno pepper (if desired)
- Creole seasoning
- Crawfish, shrimp or crabmeat (As much or as little as you like.)
Directions:
Mix all ingredients well and bake at 350 degrees for 45-55 minutes in a 9 x 13 pan.
Vickie says: In place of the jalapeno, I sometimes use ground cayenne pepper for heat.
