Sambucca Steamed Mussels

6 tablespoons canola oil
1/4 cup soffritto - Italian style
1/4 cup heavy cream
1# mussels
Salt and pepper to taste
2 teaspoon fresh chopped herbs
2 tablespoons asiago cheese
3 oz. Sambucca

Method of preparation:
Heat oil in 10 inch saute pan
Add soffritto - saute for 20seconds
Add mussels - saute for 5 seconds
Flambe sambucca in pan
Add heavy cream and salt and pepper
Cover pan with a lid.
Steam until mussels fully open.

The basic soffritto is prepared with olive oil, chopped onions (or scallions) and sometimes chopped garlic cloves. According to the recipe or the regional preference, olive oil may be replaced with butter or both may be used. The next step is to add extra ingredients to the soffritto. There is a great variety of options, such as vegetables (carrots, celery, artichokes, etc.), mushrooms, prosciutto, tuna, olives and so on.
