Penne Arrabbiato

  • 1 oz. extra virgin olive oil
  • 1 tbs. fresh shaved garlic
  • 1 oz. diced roma tomatoes
  • 1 oz. roasted sliced mushrooms
  • 6 oz. pasta (cooked)
  • 3 oz. Vodka stock
  • 1 oz. Unsalted butter
  • 1 tbs. Fresh julienne basil
  • 1/4 tsp. Salt and pepper mix'
  • 1 tbs. Shredded Romano cheese
  • 1 tsp. Chopped parsley

Vodka Stock recipe:

  • 3 oz. Chicken stock
  • 1 oz. Vodka
  • 1/2 tsp. Chili flakes


Procedure:

Preheat oil in saute pan for 30 seconds. Add garlic and saute until light brown. Add tomatoes and mushrooms; continue to saute for 45 seconds. Add vodka sauce and simmer for 10 seconds. Add butter and basil. Add cooked pasta and season with salt and pepper mix, tossing pasta and vegetables until well coated. Garnish with Romano and parsley.
