Salmon Fettuccini Alfredo

An Easy, Heart-Healthy Recipe

INGREDIENTS

  • 1/2 lb. Cedar Plank Salmon Fillet (cut into 1" cubes) See recipe no. 314
  • 1 lb. Fettuccini Pasta
  • 1/4 C. Extra Virgin Olive Oil
  • 2 Tsp. Ground Rosemary
  • 1 Tbsp. Southern Delight Basil & Oregano No-Salt-Added Italian Seasoning Blend
  • 2 C. (1 1/3 Cans) Fat Free Evaporated Milk
  • 3 Tbsp. Ground Flax Seed
  • 1 C. Grated Parmesan Cheese
  • Additional Fat Free Evaporated Milk, if sauce thickens too much

DIRECTIONS

Cook Salmon by Southern Delight recipe no. 314. Prepare Fettuccini Pasta by directions on package, but without salt, cooking slightly less than al dente. Place Olive Oil in heavy pan over medium heat, adding Italian Seasoning and Rosemary, heating for a couple of minutes. Add Evaporated Milk and Flax Seed, stirring often, cooking for 5 min. Add prepared Salmon cubes, and Parmesan Cheese, stirring to combine well, breaking up the Salmon. Remove from heat. When Fettuccini is nearly al dente, drain and add to sauce. Return to heat and stir to completely combine and heat thoroughly. If sauce is thicker than desired, add a small amount of Evaporated Milk to thin. Serve immediately. Serves 4. Enjoy!

Fabulous Cedar Plank Baked Salmon

An Easy, Low Sodium Recipe

INGREDIENTS

  • 1 Large Salmon Fillet (with skin) 2 to 3 lbs.
  • Pure Virgin Olive Oil
  • Southern Delight Basil & Oregano No-Salt-Added Italian Seasoning Blend
  • 1 Untreated Cedar Plank (about 16" long by 8" wide)

DIRECTIONS

The day before, remove any pin bones from Salmon with needle nose pliers (discarding the bones), then rinse and place Salmon on a baking sheet. Coat Salmon (both sides) with Olive Oil. Season the flesh side of the Salmon heavily with Southern Delight Basil & Oregano No-Salt-Added Italian Seasoning Blend. If salmon is skinless, season both sides. Cover with cooking wrap, and refrigerate.

Preheat oven to 350°. Place the cedar plank on a baking sheet and pre-heat the plank for 10 min. Place salmon on preheated cedar plank and return to oven, cooking for 20-25 min., until flakey. Serve with Smoked Sausage & Rice. Serves 4-6. Enjoy!

* Do no leave plank unattended in oven, due to potential fire hazard.
