Pan Seared Halibut
w/ Rosemary Lemon Beurre Blanc

  • 1-2 (4-6oz) Boneless Halibut Steaks or White-fish filets
  • 8oz Salted Butter cut into cubes
  • 4 Tbsp EV Olive oil
  • 2 Tsp. Lemon Pepper
  • 1 Tsp Granulated Garlic
  • 2 Cloves fresh Garlic Minced
  • 1/4 Bunch Baby Spinach
  • 2 Sprigs Fresh Rosemary
  • 1 Julienne Scallion
  • 1 Lemon Halved
  • 1/4 Cup Heavy Cream
  • 1/4 Cup White Wine
  • Salt & Pepper

Heat Olive oil in oven safe non-stick saute pan Med HI heat. Season Filets and place in pan. Slightly brown edges before turning filet (carefully using Spatula). Turn filet and place in 350 degree oven approx 8-10 min depending on thickness. Transfer filets to serving plate on top of spinach. In same pan on Med HI heat add two cubes of butter, garlic and rosemary saute briefly then add wine and juice from lemons. Add cream and whisk in remaining butter and scallions. Season to taste. Pour over Filets.
