INGREDIENTS

  • 20 portions Prep
  • 2 10# corned beef brisket (trim fat 1/4")
  • 5 heads of cabbage (cut into quarters leave core intact to hold wedge together)
  • 15 # carrots (cut 2" pieces)
  • water (enough to cover brisket)
  • 8 # peeled golf ball potatoes
    2 seasoning packets

PLATE

  • 8 wz slice corned beef (across grain 1/4" thick)
  • 8 wz mashed carrots
  • 4 golfball potatoes
  • 1 wedge of cabbage
  • Place sliced brisket at 6 o'clock. Mashed carrots at 12, potato at 10 and cabbage at 2.

METHOD

  • Trim fat to 1/4". Place raw briskets in large pot. Cover with cold water. Add seasoning packets. Bring to a boil
  • reduce to simmer. Simmer 2 hours. Add potatoes. Simmer 30 min. Add Carrots and cabbage. Simmer 30 min.
  • Turn off heat. Drain carrots well. Mash carrots with
