Little Dutch Bakery Alligator Tail Pastry

 Sweet DOUGH

3/4 cup water    

1/4 cup butter    

1/3 cup sugar

1/4 tsp. salt

1 egg

2 3/4 cups flour

1 envelope (or 1 Table sp.) yeast


Cheese filling

8oz.cream cheese softened

1 egg

1/2 cup sugar

1/2  cup  of  preserves  of  choice



Combine water, butter, sugar and salt in a small sauce pan.

stir over med. heat until butter is melted. Heat or cool so  that  temp is 120- 130 degrees F.

In a large bowl or in a mixer fitted with a dough hook mix 1 cup flour and yeast together until incorporated

Add the water mixture   until blended.   Mix in the egg.  Add remaining flour  alittle at a time  until you have a soft dough.

 Beat or Knead dough until smooth and elastic(about 5-10 minutes)  add  more flour if necessary , to keep dough from sticking.

Lightly coat large bowl with veg. oil.  Place dough in bowl and turn to coat with oil.  Cover bowl with a clean kitchen towel  and place in a warm, draft free area   until dough has  doubled in size (approx 1 hour) 

Preheat oven to 350 degrees and grease  a large baking pan.

Roll out dough in a rectangle shape  and apply fillings

Roll it  up  like a log and put seam on bottom.

Cut with clean scissors.

Brush some egg   on top  to aid in browning

Bake for approx.  25-40 minutes or  until browned  always keep  an  eye on it!!!

Everybodies ovens  heat  differently.
