Irish Cheddar Boxty Batter

INGREDIENTS:

  • 2# diced Yukon gold potato
  • 2# finely shredded Yukon gold potato
  • 8 cups a.p. flour
  • 6 cups milk, plus 4 tbl more if batter too thick
  • 1 cup sour cream
  • 4 tsp baking powder
  • 4 tsp iodized salt
  • 2 tsp black pepper
  • 4 eggs, beaten
  • 4 tbl scallion, snipped
  • 4 tbl minced parsley
  • 5 cups shredded Irish Cheddar

Directions:

  • Thoroughly cook diced potato in steamer then chill and mash
  • Rinse shredded potato in cold water then wring shredded potato in fresh linen to remove excess juice
  • Add shredded potato to mashed potato
  • Combine milk, sour cream and beaten egg and add to mixture
  • Sift flour, pepper, salt and baking powder together and work into mixture
  • Fold in chives and parsley
  • Fold in shredded Irish cheddar
  • Cook on pre-heated griddle until browned on both sides and cooked through

Notes:

  • Store in plastic 1/6th pans contact wrapped with plastic
