Biscuit Tortoni Filling

Makes 1- 9 inch springform pan

Ingredients

  • 1- qt. heavy cream whipped
  • 1/2- c. chilled espresso
  • 1/2- c. amaretto liquor
  • 1 1/2- c. 10x Confectionary sugar
  • 1 cup amaretti cookies crushed
  • 1- c. toasted almonds crushed

Instructions

Whip cream until stiff peaks, adding sugar a little at a time. Mix espresso and Amaretto together and add to stiffened cream mixture, a little at a time. Whipping until stiff- Do not overwhip. Crush amaretti cookies and almonds and "fold" into mixture. Pour into spring form pan with crust and freeze overnight.
