Rebecca Hammond's Orzo Salad
3/4 cup orzo pasta
1 14oz can diced tomatoes, drained
1 14oz can black beans, rinsed and drained
1/2 medium onion, chopped
1 bag fresh spinach, chopped
1 4 oz container of crumbled feta cheese
1/2 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon mrs. Dash garlic and herb seasoning
1 tablespoon grated parmesan cheese
-cook orzo pasta in salted water for nine minutes
-drain pasta and pour hot pasta over spinach in a large bowl
-add onions, tomatoes, beans and cheese to orzo mixture and combine well.
-mix together all ingredients for the dressing with a wisk.
-pour dressing over salad and enjoy!!
