Brioche

Sponge

  • 3/4 cup milk
  • 2 tablespoons Yeast
  • 3/4 cup Flour

Gently warm milk until it is approximately skin temperature, dissolve yeast and add flour, mixing into a soft dough forms. Set aside in a warm place, covered until doubled in volume.

  • 10 Eggs
  • 6 cups Flour
  • 2 3/4 cups Butter (softened)
  • 1 tbsp Sugar
  • 1 tbsp Salt

Place sponge in the mixer and add in the eggs one at a time. Then add the Flour all at once with the sugar and salt. Slowly mix in the butter, scraping the bowl often. Put into a deep pan and let rise for 30 min bake at 375

Custard

  • 6 yolks
  • 3 cups milk
  • 1/2 cup sugar

Scald milk and sugar then temper the eggs in, and then soak the brioche while the bread and custard are warm. Cut into 2 x 2 squares, sear in butter and serve warm with maple syrup or honey.
