- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 3 cups half & half
- 1/2 cup sugar
- Pinch salt
- 2 teaspoons vanilla
CHOCOLATE SOY PANNA COTTA
Substitute 3 cups chocolate soy milk and don't add lemon. Follow same directions.
12-16 frozen or fresh berries, any kind - I like the mixture of blackberries, blueberries & raspberries or simply raspberries
1/3 to 1/2 cup sugar or Splenda or Stevia to taste (or no sugar if you like)
Splash of lemon juice
Put frozen or fresh berries in pan and bring to a simmer, stirring occasionally, for 10 minutes or so. Add sugar and raise heat to high - boil for 2 minutes or so. Strain, stir in lemon juice and salt. Chill several hours or up to 3 days, or freeze up to 6 months.
