Fresh Blueberry Muffins

  • 1 3/4 cups all purpose flour
  • 1/2 cup sugar
  • 2 3/4 teaspoons baking powder
  • 2 teaspoons lemon zest
  • 3/4 teaspoon salt
  • 1 egg, slightly beaten
  • 3/4 cup milk
  • 1/3 cup oil
  • 1 cup fresh blueberries
  • 1 tablespoon flour
  • 1 tablespoon sugar

topping

  • 1/4 cup sugar
  • 2 1/2 table spoons flour
  • 1/2 teaspoon cinnamon
  • 1 1/2 tablespoon butter

Combine first five ingredients in bowl...combine egg, milk, and oil. stir into dry ingredients stirring just until moistened.

combine blueberries, 1 tablespoon flour and 1 tablespoon sugar and fold into batter.
spoon into 12 muffin pans greased, filling 2/3 of the way.

For topping:
combine 1/4 cup sugar, 2 1/2 tablespoon flour and cinnamon, cut in better until resembles coarse meal. sprinkle over batter.

Bake 400 for 18-22 minutes or until golden.  take out of pans immediately.
