Just Cured Smoked Salmon and Onion Cream Crepe Filling

Just Cured Smoked Salmon and Onion Cream Crepe Filling

Ingredients:

  • 4 ounces Just Cured smoked salmon, sliced into thin strips
  • 1 small or 1/2 large red onion
  • 2 T butter
  • 1/2 cup crème fraîche
  • 1 to 2 T heavy cream
  • 4T minced chive
  • Salt and fresh ground pepper to taste

Method:

Remove both ends from onion then halve lengthwise. Peel onion. Cut both onion halves into very thin strips lengthwise. Over low heat, melt butter in a medium saute pan. Add onion and cook slowly until the onion slivers are very soft, about 15 minutes. Do not color the onion. Remove from heat and allow to cool.

In a small bowl, mix crèee fraiche, cream and 3T chives until blended. Salt and pepper to taste. Set aside 3T of this mixture. To the remaining cream mixture, add the salmon and onion. Stir to combine. Add a bit more cream if the mixture is too thick.

To serve, place 1/4 of the salmon and onion cream onto each cooked crepe. Do not cook the mixture more than absolutely necessary. Roll up crepes and garnish with reserved chive cream and the remaining 1T of chives.
