Saint Hildegard Salad

  • 1 small granny smith apple
  • 1⁄2 cup orange juice
  • 2 bulbs fresh fennel
  • 1 .5-ounce bag mixed spring salad greens
  • 2 ounces goat cheese
  • 1⁄4 cup toasted sliced almonds
  • 1⁄2 cup sliced red onions

Cut granny smith apple into small dice-sized cubes and pour orange juice over and set in refrigerator while preparing the rest of the salad. Wash and rinse fennel and spring salad greens. Just before ready to serve take granny smith apples out of orange juice and combine with mixed greens, fennel, cheese, almonds and onions.


  • 2 tablespoons orange juice
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon red wine vinegar
  • dash of salt and freshly cracked black pepper

Combine all ingredients and shake well. Add to mixed salad just before ready to serve.
