Stuffed Zucchini

Ingredients for Stuffed Zucchini:

  • 2-4 Zucchini depending on size
  • 1/2 cup diced onion
  • 1/2 diced bell pepper
  • 2 tsp extra virgin olive oil
  • 1 lb ground turkey
  • 1tsp crushed garlic
  • 1/2 tsp ground fennel seed
  • 1 cup cooked brown rice
  • 1/2 cup chopped basil
  • 1/4 cup chicken stock
  • 3/4 cup grated parmesan cheese


  • Cut zucchini in half lengthwise
  • Scrape out center of zucchini w/ spoon or melon baler (Leaving 1/2 inch flesh on each side)
  • Blanch cut zucchini is salted boiling water for 2 minutes or until al-dente (Zucchini can also be micro waved on high for 3 minutes)
  • Saute bell peppers and onion in olive oil until tender
  • Brown ground turkey and drain fat
  • In a bowl combine:
    • Ground Turkey
    • Peppers/Onions
    • Crushed Garlic
    • Brown Rice
    • Chopped Basil
    • Chicken Stock
    • Ground Fennel Seed
  • Stuff zucchini with stuffing
  • Bake in 375 degree oven until stuffing is browned on top
  • Sprinkle w/ grated parmesan

(Recipe also works with yellow summer squash or zucchini and squash cut is circles as appetizers)
