LaRosa's Pasta recipes

Mark LaRosa's Pasta Sausage Alfredo (serves 3-4)

  • Ingredients:
  • 1/2 Pound Pasta (Penne, Ziti, Fettuccini or your favorite variety)
  • 1/4 stick of butter
  • 2-3 cloves of garlic - minced (to taste)
  • 1/2 pound of Italian Sausage (mild or hot - bulk or remove casing from links)
  • 1 cup heavy cream
  • 1/2 cup milk or half & half
  • 1/3 cup Parmesan Cheese
  • Black pepper to taste
  • Fresh chopped basil or parsley for garnish (if desired)
  • Preparation:
  • Boil pasta in rapidly boiling water according to directions on package.
  • While pasta is cooking...
  • On medium high heat in a skillet
  • Melt butter
  • Add minced garlic sauté 1 minute
  • Add Sausage to skillet; brown & break apart while cooking -- sauté 5-6 minutes
  • Add cooked pasta noodles, cream, milk, parmesan cheese and pepper
  • Simmer for 3-4 minutes until thick and creamy (if necessary - adjust thickness by adding additional milk or a little of the pasta water)
  • Garnish with fresh chopped basil or parsley (if desired)
  • Serve and Mangia! (Italian for Eat!!)
  • Optional - variations
  • o Add grated nutmeg to taste
  • o Instead of Sausage substitute...
  • 1. Add 2 cups sliced Zucchini, Broccoli or Asparagus
  • 2. Add 3-4 skinless boneless chicken breast halves - cut in strips
  • 3. Add 2 cups of chopped bacon or ham
  • o For extra flavor try adding a Cajun spice blend -- add 1 to 2 tablespoons (to taste)...

 

Mark LaRosa's Pasta with Sausage & Peppers (serves 3-4)

  • Ingredients:
  • 1/2 Pound Pasta (Penne, Ziti, Fettuccini or your favorite variety)
  • 1 tablespoon olive oil
  • 2-3 cloves of garlic - minced (to taste)
  • 1 small onion cut in strips
  • 1 small bell pepper cut in strips (red, yellow or orange variety)
  • 1/2 pound of Italian Sausage (mild or hot - bulk or remove casing from links)
  • Salt & Black pepper to taste
  • 3/4 cup dry white wine
  • 2 1/2 cups prepared pasta sauce (about 1 jar -- like LaRosa's)
  • 1/3 cup Parmesan or Romano Cheese
  • Fresh chopped basil or parsley for garnish (if desired)
  • Preparation:
  • Boil pasta in rapidly boiling water according to directions on package.
  • While pasta is cooking...
  • On medium high heat in a skillet
  • Add olive oil - heat slightly
  • Add minced garlic, onion & bell pepper strips sauté 1-2 minutes
  • Season with salt and pepper
  • Add Sausage to skillet; brown & break apart while cooking -- sauté 5-6 minutes
  • Add white wine - simmer for 1-2 minutes
  • Add cooked pasta noodles & pasta sauce
  • Simmer for 3-4 minutes
  • Garnish with fresh chopped basil or parsley (if desired)
  • Serve and Mangia! (Italian for Eat!!)
