Pomegranate - Bourbon Glaze Recipe from Chef Tony

at Jeff Ruby's Waterfront

Whole Black Peppercorns 2 Tbsp

Dried & Split Chipotle Pepper 1 Each

Crushed Garlic Cloves 3 Each

Fresh Thyme Leaves 4 Sprigs

Good Kentucky Bourbon 1 3/4 Cups

~ Add ingredients above to a heavy bottomed sauce pot & flambé

~ reduce liquid by half, making sure all alcohol has burned off

Juice & Zest of Orange 1 Each

Juice & Zest of Lemon 1 Each

Light Corn Syrup ¾ Cup

Pomegranate Puree 2 1/2 Cups

~ Add the above ingredients to pot & bring to a simmer

~ reduce heat & let the mixture simmer until reduced by half

~ strain glaze through a fine mesh strainer
