Sweet Potato Casserole

Kentucky Sweet Potato Casserole aka Col's sweet potatoes

3 cups Mashed sweet potato

1/3 cup Flour

1/2 tsp. Salt

2 Slightly beaten eggs

1/3 stick Butter

1/4 cup Water

1/4 cup Evaporated milk

1 tsp. Vanilla

1/2 cup Pecan halves

1 jigger Kentucky Bourbon


1 cup Granulated sugar

1 cup Light brown sugar

1/3 stick Butter

Preheat oven to 350 F.

Mix all ingredients except pecans and topping in a large bowl.

Pour into a buttered 9X12 casserole dish.

Combine topping ingredients and crumble over sweet potatoes.

Cover top with broken pecans and bake for 25 minutes.

Check about half way and three quarters of the way through. If pecans are starting to get too dark (slightly burnt), put

a foil tent over the dish.

Serves 10
