Sonoma Valley Seared Ahi Tuna


Fresh Ahi Tuna Fillet

3 Tbs Sea Salt

1 Tbs Pepper


2 Tbs Fresh Lemon Juice

1/2 Cup Heavy Cream

4 Tbs Unsalted Butter

Chive Oil:

1/8 Cup Fresh Chives

1/2 Cup Fresh Spinach

1 1/2 Cups Olive Oil

Place ingredients in blender and blend until

Smooth. Strain through strainer or cheese cloth. Reserve

Prepare Mashed Potatoes, Rice or Salad mixture to your liking

Rub Tuna with Olive Oil and Season with Salt & Pepper mixture

Sear Tuna on High Heat for Approximately 2 minutes per side

Remove Tuna from pan and reserve for plating

Add 2 Tbs Lemon Juice to pan and reduce by 1/2

Add Heavy Cream bring to boil and remove from heat Whisk in unsalted Butter

To Plate: Place Tuna over your choice of Mashed Potatoes, Rice or Salad.

Drizzle with Citrus sauce and garnish with Chive Oil and serve
