The Newport Syndicate's Halibut Sinatra


2 halibut filets

10 peeled and de-veined shrimp(raw)

1 pint of heavy cream

1 cup of lobster stock

1 tablespoon butter

salt and pepper to taste

2 tablespoons cup olive oil

lobster sauce-in a small sauce pan, put heavy cream over a medium heat. Let it reduce by one half its volume. Add lobster stock and simmer for about 10 minutes.turn off heat and add butter and whip until incorporated. Set aside.

Halibut preparation-in a skillet, over a medium heat, begin to heat oil. dust halibut filets lightly with salt and pepper and place into skillet. sear each side of fish for about 2-2 1/2 minutes on each side. add shrimp to skillet and cook on each side until opaque. drain off excess oil from skillet and pull away from heat. Add your lobster sauce and serve.
