PEANUT BRITTLE
1 c sugar
½ c light corn syrup
¼ tsp salt
¼ c water
1 c peanuts
2 T softened butter
1 tsp baking soda
In a heavy saucepan, heat first four ingredients to boiling. Stir until sugar is completely dissolved. Stir in peanuts. Continue cooking until candy thermometer reads 300°. Remove from heat. Stir in butter and baking soda. Pour onto greased cookie sheet. Using forks, work mixture into rectangle.
Once cooled, break up by hand.
