Pan Seared Salmon with Bacon, Garlic, & Red Wine

2 - 6oz Salmon Fillets

4 - Strips of Bacon

2 Tbsp. Chopped garlic

1 Tbsp. Chopped Shallots

Salt & Pepper

2 Tbsp. Mayo

¼ Cup Red Wine

2 Tbsp. Chop Parsley


4 Tops Green Onions

4 Tbsp. Diced Red Peppers

Pan-fry bacon in a heavy skillet until just done. Remove bacon and pour off excess fat. Melt 2 Tbsp. of butter. Season salmon fillets with salt and pepper and add to skillet and sear until brown on both sides. (2 - 3 minutes per side) Transfer to heated plates, turn heat down to medium and add shallots and garlic. Sauté about ½ minute and de-glaze with Red Wine. Whisk in mayo, add chopped parsley. Simmer and serve over crossed bacon strips and Salmon fillets. Garnish with tops of green onions and diced red peppers.
