French Muffins w/Strawberries & Sour Cream

1 Pint Strawberries

¼ Cup Sugar

3 Eggs

2 Tbs Milk

½ tsp ???

½ tsp Cinnamon

2 Tbs Sugar

1 tsp Vanilla Extract

Pinch of salt

2 English Muffins, split

1 ½ Tbs Unsalted Butter

½ Cup Sour Cream

  • 1. Set aside a whole strawberry for garnish. Slice the remaining berries and put them in a small bowl. Sprinkle with the ¼ cup of sugar and toss to coat.
  • 2. In a large shallow dish, lightly beat the eggs, milk, vanilla, spices, sugar, and salt until blended.
  • 3. Place the muffin halves, split-side down in the egg and milk mixture. Prick the muffin with a fork and soak for 1 to 2 minutes. Turn the muffins and soak until moist throughout, 1 minute longer.
  • 4. In a large skillet, melt the butter over moderate heat. Add the muffins and cook until golden brown on the bottom about 2 minutes. Turn and cook until crisp and brown on the second side, about 2 minutes longer.
  • 5. Remove the muffins to serving plates and top each half with sliced berries and a spoonful of sour cream. Garnish each plate with a whole strawberry.
