RECIPE: Metropole's Broccoli and Ham Fritters; Smoked Aioli

Broccoli & Ham Fritters

Dry ingredients

  • Chickpea flour: 1c
  • Baking powder 1t
  • AP flour 1c
  • Salt 1t

Wet ingredients

  • Buttermilk 1.25c
  • Eggs 1

Flavor ingredients

  • Broadbent Ham 1/3c
  • Broccoli 1/3c
  • Cheddar, grated 2tbsp
  • Chives 1tbsp

Procedure:

1. In a medium mixing bowl whisk together dry ingredients.

2. In a medium mixing bowl whisk together wet ingredients.

3. Slowly mix wet to dry. Be sure not to over-mix as the batter will be tough.

4. Fold in the flavor ingredients.

5. Fry fitters at 350*F.

Smoked Aioli

Yield: 1 1/4c

Ingredients:

  • Canola oil 1/2c
  • Evoo 1/2c
  • Smoked paprika 1tbsp
  • Cumin, ground 1tsp
  • Kosher salt 1tbsp
  • Garlic cloves, minced 2
  • Water as needed
  • Egg yolks 3
  • Sherry vinegar 1tbsp

Procedure:

1. Combine oils and heat on low for 2-3 minutes. Whisk in paprika and cumin till blended. Cool and reserve.

2. In a food processor puree garlic with salt. Add egg yolks and sherry vinegar.

3. While food processor is running, starting with a few drops, slowly add the flavored oil. Work the few drops to thin steady stream until the aioli starts to thicken. Add a couple drops of water to thin if necessary. Aioli should be as thick as mayonnaise.

4. Taste to see if you need more salt or vinegar. Adjust taste to your liking.
