Back to School Pasta Salad

Note: This recipe is so simple that your kids can help prepare it for their weekly lunches. The ingredients in this pasta salad make a well rounded, filling and best of all nutritious for any lunch box.

  • 12 oz Amish Naturals Penne
  • 4 qt Water
  • 1 Tbsp Kosher Salt
  • 1 jar Amish Naturals Summer Tomato Dressing
  • 1 cup Cheddar Cheese, small cube
  • 1 cup Swiss Cheese, small cube
  • 3/4 cup Cubed Ham
  • 3/4 cup Pepperoni, thick sliced and ¼'ed
  • Assorted Veggies*
  • Salt and Pepper to taste
Bring water to a boil (with salt) in a large pot with a lid. When the water is at a rolling boil remove the lid and add pasta. Cook for 8 minutes then drain into a colander. Rinse with cold water and set aside.
Combine all ingredients in a large bowl and season to taste. This pasta salad is best made ahead, you can store it in your refrigerator for 5-6 days.
* You can add whatever veggies your child prefers, I like grape tomatoes, cucumbers and carrots.
