Brussel Sprout Salad 1 bag shredded Brussel Sprouts 1 head of Romaine lettuce chopped 1 honey crisp apple cut into batons- toss in lemon juice to prevent browning 5 slices thick cut maple bacon cut into small pieces and cooked until crispy. 1 small head of Radicchio sliced thin 2 carrots grated 1/2 cup of Parmesan cheese grated into shards 1/2 cup diced red onion 1/2 cup of cinnamon pecans or other honey roasted nuts broken into small pieces. Dressing 2 tablespoons pure maple syrup 3 Tablespoons Apple Cider Vinegar 1 tsp Dijon mustard 1/4 cup extra virgin olive oil 1/4 cup orange juice 1/2 tsp salt 1/2 tsp granulated garlic 1/4 tsp pepper Shake well to combine Toss all salad ingredients EXCEPT NUTS with dressing. Sprinkle nuts over top of salad. Enjoy

Parmesan Garlic Roasted Brussel Sprouts Preheat oven to 400 1 pound sprouts Trim bottom of spouts and cut in half line large pan with parchment paper to make clean up easy In a large bowl add 3 tablespoons olive oil 1/2 teaspoon salt 1/2 teaspoon pepper 1 teaspoon italian or ranch seasoning 3 cloves of garlic minced 1/2 cup of parmesan grated Toss brussels to coat and put in a single layer on pan, cut side up roast for 20-25 minutes until golden brown. top with Balsamic vinegar or balsamic glaze Brussel sprouts are such a versatile vegetable.
