Molletes is what I ate for breakfast as a kid growing up in Mexico, it is a super easy snack to make for yourself or your kids.

1 cup Frijoles Refritos

1 cup shredded Chihuahua
cheese, mozzarella, or
sharp cheddar
1 cup Pico de Gallo (page 29)
